Coffee Analysis

Under California's Proposition 65, the coffee sold by several coffee companies in California must bear the cancer warning label. The reason is that the roast coffee sold on the market was found to contain high concentrations of acrylamide, a carcinogenic chemical. Scientists believe the acrylamide in food is a product of the Maillard reaction, which occurs when sugars and amino acids are heated above 248° F, or 120°C. What we do know is that when coffee beans are roasted, acrylamide is formed. There's no way to remove acrylamide from coffee, so when you drink it, you're exposing yourself to the chemical.

Acrylamide has a variety of industrial uses, and has been on the Proposition 65 list of dangerous substances since 1990. Several coffee companies quoted the National Coffee Industry Association's announcement on California's Proposition 65, saying that applying a carcinogenic warning label on coffee products would be a misleading consumer behavior. While acrylamide on its own is designated a "probable" human carcinogen, coffee in beverage form is most likely not a carcinogen, according to the International Agency for Research on Cancer.The chairman and CEO of the National Coffee Industry Association stated that Coffee has long proved to be a healthy drink.. The consumers' confusion is not conducive to public awareness of health. The US government issued a nutrition guide which states that coffee is a part of the healthy life. The World Health Organization (WHO) also made it clear that coffee does not cause cancer.
