Food allergens are considered as some certain substances in the food that can cause immune reactions and allergic reactions matched to specific populations. Allergic reactions caused by food allergens can bring different allergic reactions that may attack respiratory system,gastrointestinal system,central nervous system,skin,muscle and skeleton. Some of them even can lead to anaphylactic shock, which poses a threat to life and health of mankind.The Codex Alimentarius Commission (CAC) stipulates that eight kinds of food ingredients that could cause allergenic reactions including cereals containing gluten, crustacean animals, eggs, fish and its products, peanuts, soybean and soybean products, milk and dairy products (including lactose), nuts and nut products, sulfites with concentration of 10 mg/kg or more. In addition, CAC stipulated that these ingredients must be marked on food labels. According to the requirements of CAC on labeling of food allergens, the European Union (EU), the United States, Japan, Australia and New Zealand have already established the compulsory acts on food allergens.
