Description

Isomaltulose, also known as palatinose, is a naturally occurring sugar found in sugar cane, honey and other products. Like sucrose, isomaltulose consists of one glucose and one fructose unit. However, isomaltulose has an α-1,6-glycosidic bond, which is more strongly bound and takes longer to digest than the α-1,2-glycosidic bond found in sucrose. It is 42% as sweet as sucrose and has sweetening properties similar to sucrose. It can mask off-flavors and balance taste and flavor, making it ideal for use in a variety of foods such as confectionery and beverage.

Main Functions

  • Isomaltulose will not be digested by saliva, stomach acid and pancreatic juice after ingestion, and will only be enzymatically broken down into glucose and fructose and absorbed in the small intestine. Moreover, due to its slow decomposition, it does not raise blood glucose levels. 
  • After digestion and absorption, isomaltulose does not cause insulin secretion and does not activate the lipoprotein lipase, so the presence of isomaltulose makes it difficult for fats and oils to be absorbed into the adipose tissue.  
  • Isomaltulose is not utilized by cavity-causing microorganisms in the oral cavity, so it will not cause tooth decay and periodontal diseases. It can also effectively inhibit tooth decay caused by sucrose.
