Allulose is a naturally occurring sweetener that was originally found in wheat and later in certain fruits, including pineapple nectar, figs, and raisins. It is about 70% as sweet as sucrose, has 90% fewer calories than sucrose, and has a somewhat refreshing, non-bitter flavor. Allulose is considered safe for consumption and approved for use in foods and beverages. It can be a viable alternative to table sugar, helping to reduce people's intake of added sugar without having to lose their favorite sweet taste.

Main Functions

  • With the advantages of high sweetness, good solubility, low calorie and low glycemic response, allulose is considered as one of the most ideal sucrose substitutes. Adding allulose to food not only improves its gelatinization, but also improves its flavor by having a Maillard reaction with food proteins.
  • Another advantage of allulose is that it does not cause tooth decay like regular sugar. Bacteria in the mouth can ferment sugar, producing acids that erode tooth enamel and lead to cavities. Allulose is not metabolized by the bacteria in your mouth, making it a safe alternative for dental health.
  • Allulose has been shown to have prebiotic effects similar to other commonly used prebiotics such as inulin and oligofructose, feeding beneficial bacteria in the gut and promoting a healthy gut microbiome.
