β-carotene is the most ubiquitous and stable pigment in nature. It is a member of the family of natural chemicals called carotenoids, which are abundant in plants, including sweet potatoes, carrots, spinach, papayas, mangoes, etc., giving fruits and vegetables their vibrant yellows and oranges. β-carotene is widely used in the food, feed, pharmaceutical and cosmetic industries.
