Description

Thermostable α-amylase NZs-BE-B006 is a high-performance food-grade enzyme preparation specially developed for the processing of sweet potatoes, yams, and other starch-rich root vegetables. Produced through advanced microbial fermentation followed by purification, this enzyme efficiently hydrolyzes starch into soluble dextrins and fermentable sugars, significantly improving the sweetness, texture, color, and drying performance of the final product. The enzyme also exhibits excellent thermostability and maintains high catalytic activity under high-temperature processing conditions, making it particularly suitable for industrial food manufacturing.

Recommended Dosage

The recommended application rate of thermostable α-amylase NZs-BE-B006 is 0.5-5.0 L per metric ton of raw material, depending on the variety of sweet potatoes or other starch-rich materials, processing conditions, desired sweetness, and final product specifications.

Typical Process

A typical processing procedure is outlined below:

  • Wash and peel fresh sweet potatoes.
  • Slice or cut into the desired size.
  • Prepare an enzyme solution by diluting thermostable α-amylase NZs-BE-B006 with clean water.
  • Immerse the sweet potato slices in the enzyme solution using approximately 2–3 times the weight of the raw material in water.
  • Allow enzymatic treatment for approximately 30 minutes to ensure adequate penetration.
  • Steam or heat the treated material under suitable processing conditions to activate starch hydrolysis.
  • Proceed with drying, baking, or dehydration according to the production process.
  • Cool, package, and store the finished products.

Storage

Store the product in its original sealed container in a cool, dry, and well-ventilated place away from direct sunlight, excessive heat, and moisture. Keep the container tightly closed after each use to minimize exposure to air and humidity.
