Description
Maltogenic amylase NZs-BE-B009 is a high-performance food-grade enzyme preparation developed through submerged fermentation of a selected Bacillus licheniformis strain, followed by advanced purification, concentration, and drying processes. Designed primarily for the baking and flour milling industries, this enzyme effectively modifies starch during dough processing and storage, helping to delay starch retrogradation.

Applications
- Bread production: Maltogenic amylase NZs-BE-B009 is widely used in the production of various breads. It improves crumb softness, increases loaf volume, enhances elasticity, and significantly delays firming during storage, allowing bread to maintain a fresh-baked texture for several additional days.
- Maltose syrup production: The amylase can also be applied during starch saccharification to produce maltose-rich syrups. Its controlled hydrolysis provides stable conversion efficiency and supports the production of high-quality maltose syrup with consistent processing performance.
Recommended Dosage
For most baking and flour treatment applications, the recommended dosage is 0.1-1.0 kg per ton of dry flour or starch-based raw material. The optimum dosage depends on factors including flour quality, product type, processing conditions, and production equipment. Small-scale production trials are recommended before commercial implementation to determine the most effective dosage for each specific application.
Storage
Store the product in its original, tightly sealed packaging in a cool, dry, and well-ventilated location away from direct sunlight, excessive heat, and moisture. Keep the container closed when not in use to prevent moisture absorption and maintain enzyme activity.
